Melwi

Recipe in Arabic: ملوي

Melwi or Msemen is one of the most popular bread types in Morocco. It is very delicious and irresistible. It is similar to the paratha bread. This type of bread is also called: Msemen, Mlawi, or rghayef. The recipe is very easy to make and should not take a long time to prepare. Simply follow these steps:

Ingedients

  • 2 cups of white flour
  • 1 cup of fine semolina
  • 1/2 cup of melted butter
  • 1 teaspoon of salt
  • 1 teaspoon of yeast

Preparation

  1. Mix all the ingredient (except butter) and knead until the dough becomes tender
  2. Make 7 or 8 balls out of the dough you have
  3. Let the balls rest for 15 minutes
  4. Take every dough ball and flatten it completely until it becomes very thin
  5. Rub butter on its surface (both sides)
  6. Sprinkle semolina on it and put it on a preheated frying pan
  7. Flip it to the other side to cook and follow the same steps with the other balls
  8. Serve with honey and cheese
  9. Note: If the melwi turns out hard instead of tender bread, it is possible that you didn't put enough butter or water in the dough. Or you didn't let the dough rest enough.

You can slightly change the above ingredients and preparation for Melwi to match your needs and taste.
