Chicken Tajine

Recipe in Arabic: طجين دجاج

Chicken tajine with olives and onions is a delicious Moroccan recipe, made in celebrations and for guests or even in regular days. It is usually recommended when you're expecting a guest, because it's a sign of generosity. This dish is called also: Djaj mhamar, tajine djaj, roasted chickens, chicken with green olives. The recipe is very easy to make and should not take a long time to prepare. Simply follow these steps:


  • 1 chicken
  • 3 chopped onions
  • 3 gloves of garlic (diced)
  • 1 cup of green olives
  • 1 pickled lemon
  • 2 tablespoons of chopped cilantro
  • 1 teaspoon of ginger
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1/2 teaspoon of saffron


  1. Put the chicken, oil, onions, garlic, ginger, salt, and other spices into a cooking pot on a medium fire for 5 minutes while stirring continuously.
  2. Add water and let cook for 30 minutes or until the chicken is almost done. (Please see the alternative to step 2 below).
  3. Add slices of lemons and let it cook 10 more minutes.
  4. To serve, put the chicken on the dish and decorate it with green olives (and French fries if desired).
  5. ALTERNATIVE TO STEP 2: add water and let everything cook for 20 min, then take only the chicken out, put it in a preheated oven and roast it for 15 minutes, then put back in the cooking pot. Then proceed to step 3 …
