Chorba | شربة | Moroccan Recipe



Recipe in Arabic: شربة

Chorba or (Shorba) is a healthy and delicious Moroccan dish. Shorba is different than Harira because it contains more vegetables. This recipe is also called: Soba, or Shourba. The recipe is very easy to make and should not take a long time to prepare. Simply follow these steps:


  • 250 grams of beef
  • 2 carrots
  • 1 turnip
  • 2 potatoes
  • 3 stalks of celery
  • 3 big tomatoes
  • 1 bouquet of parsley
  • 1 big onion
  • ½ cup of vermicelli
  • 1 tablespoon of oil
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • ½ teaspoon of saffron


  1. Peel the skin of tomatoes, carrots, potatoes and onions and dice them
  2. In a cooking pot, put meat, diced vegetables, and add all the spices, and oil.
  3. Add 2 liters of water and leave for 50 minutes on medium fire
  4. Add vermicelli and leave for an extra 10 minutes. Enjoy!
  5. Note: If you prefer a pureed shorba, then instead of leaving the pot to cook for 50 minutes, leave it to cook for only 30 minutes, then puree everything in a blender then put back to cook for 10 minutes before adding the vermicelli)

You can slightly change the above ingredients and preparation for Chorba to match your needs and taste.
