Moroccan Entrails (Tkalia)

Recipe in Arabic: تقلية

Tkalia is a traditional Moroccan dish, prepared mainly during Eid, but many people cook it during regular days since it's so delicious. This dish is also called: Tqelia or Tkelia. The recipe is very easy to make and should not take a long time to prepare. Simply follow these steps:


Ingedients

  • 1 kg of sheep (or cow) entrails
  • 2 big onions
  • Half cup of green olives
  • ¼ cup of olive oil
  • 3 gloves of garlic
  • 2 tablespoons of tomato paste
  • 1 pickled lemon
  • 1 bouquet of parsley and cilantro
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • ½ teaspoon of ginger
  • 1 teaspoon of cumin

Preparation

  1. Add the entrails, onions, garlic, parsley and cilantro in a cooking pot on medium heat
  2. Add all the spices and leave for 30 minutes
  3. Add tomato paste and leave for another 15 min or until cooked
  4. Serve on a plate with green olives and slices of pickled lemons
