Moroccan Liver (Kabda)

Recipe in Arabic: كبدة

Kabda is a Moroccan dish which is very delicious and simple to make. It is made of liver, some spice and onions. It is simple but tasty. This dish is also called: Kebda, or Kubdah, The recipe is very easy to make and should not take a long time to prepare. Simply follow these steps:


Ingedients

  • 1 kg of liver (cow or sheep)
  • 1 big onion (chopped)
  • 1 bouquet of parsley and cilantro
  • 1 cup of oil
  • 1 tablespoon of cumin
  • 1 teaspoon of red pepper
  • 1 teaspoon of black pepper
  • 1 teaspoon of ginger
  • ½ teaspoon of saffron
  • 1 teaspoon of salt

Preparation

  1. Dice the liver into medium size cubes
  2. Add the rest of the ingredients to it and mix
  3. Place everything into a preheated frying pan (no need to add extra oil)
  4. Stir from time to time for 15 minutes or until the liver is cooked

You can slightly change the above ingredients and preparation for Moroccan Liver (Kabda) to match your needs and taste.
