Chebakia
Recipe in Arabic: شباكية
Chebakia is a delicious and tasty Moroccan pastry made during Ramadan and other happy occasions. It is made of dough, honey, and sesame seeds. This pastry is also called: chebbakia, and mkharka. The recipe is very easy to make and should not take a long time to prepare. Simply follow these steps:
Ingedients
- 5 cups of flour
- 1 cup of butter
- 1 egg
- 1 cup of warm water
- ½ liter of oil (for frying)
- 100 grams of sesame seeds
- 1 tablespoon of sugar

- 1 teaspoon of yeast
- ½ teaspoon of saffron
- 1 teaspoon of cinnamon
- ¼ teaspoon of salt
- 1 tablespoon of vinegar

Preparation
- Mix yeast with a little bit of warm water
- Mix saffron with the same warm water
- Mix sugar and butter in a bowl
- Mix flour in a separate ball
- Add everything to the bowl of flour while stirring continuously
- Make sure that everything is mixed well and that the dough is tender
- Cover the dough and leave it in a warm place for 30 minutes to ferment
- On top of a surface sprinkled with flour, flatten the dough until it becomes stretched thin
- Cut it into medium sized squares
- Make 5 incisions inside each square with a knife
- Slide your finger inside each incision and pull until the square becomes like a net
- Fry the nets in a preheated oil until it becomes brown (picture)
- Put the chebakia on a dripper to get rid of the excess oil
- Serve on a place and decorate with sesame seeds
